A Gulf Coast take on Cajun and Creole cooking: roux technique, gumbo, blackened fish and the seasoning ratios that make it work. The class cooks through the dishes together and eats them at the end, with recipes to take home.
What you'll do
- Stir a dark roux without scorching it
- Build a shrimp and andouille gumbo
- Blacken fish in cast iron
- Balance Creole seasoning heat and salt
- Sit down to gumbo, blackened fish and rice
