A Sunday-style class on the fundamentals of Southern cooking: buttermilk fried chicken in cast iron, slow greens, pan gravy and skillet cornbread. The instructor covers oil temperature, seasoning layers and how to keep everything warm and timed for the table. Lunch is what you cook.
What you'll do
- Soak buttermilk and season fried chicken correctly
- Fry in cast iron without burning the oil
- Simmer collard greens with smoked turkey
- Whisk pan gravy from the drippings
- Bake a skillet of cornbread alongside
