A Wednesday night rolling class: rice seasoning, fish handling and knife work first, then everyone builds two rolls and a set of nigiri. Fish is sourced that morning, and the instructor covers what to look for when you buy sushi-grade fish yourself.
What you'll do
- Cook and season sushi rice properly
- Slice tuna and salmon for nigiri and maki
- Roll with a bamboo mat and cut clean maki
- Make spicy mayo and a ponzu dipping sauce
- Eat everything at the counter with sake or tea
